      Since taking the reins at Momofuku Seiōbo, Paul has elevated the restaurant to the top of Australia’s fine dining scene and established himself as one of the country’s best chefs.       Melbourne, the art and design capital of Australia, was a clear choice of location for Victor’s restaurant. Its atmosphere of bold design and experimentation are line with his approach to food. At Lee Ho Fook, Victor’s mission is to reassemble, reorder, and reinvent Chinese Australian cuisine by adding his own personal and creative direction.

      While some chefs draw on nostalgia to surprise and delight people, chef Shaun Quade uses innovation and cutting-edge technology to stimulate his guests’ imagination and appetites. “Hospitality is a very traditional industry but technology has changed the game completely,” he shares. His first restaurant, Lûmé, was one of the first to incorporate augmented and virtual reality into the fine dining experience when it opened in 2015.

      Though he is known for his interdisciplinary and open-minded approach to cooking, Shaun puts as much focus into refining details of the entire dining experience, thoughtfully selecting the setting, the music, and even the language used during the meal. He has created once-in-a-lifetime dining experiences in some of Western Australia’s most remote and beautiful locations – from salt lakes to beautiful bushlands and pristine beaches.

      Paul works together with the Aboriginal groups in the region to source seasonal local produce that inspire and shape his menus. His unique take on dining gives guests a refreshing taste of the locale in an exciting, immersive dining experience.

    We invited guests to a unique gourmet food, wine, and travel experience in the Margaret River Region of Western Australia.

Guests were led on a series of epicurean adventures, thoughtfully selected to inspire excitement, passion, and the imagination. At the pinnacle were three dining experiences linking each chef’s artistry to the unique qualities of Lexus.

The journey started at Feast in the Forest, an evening celebrating craftsmanship in a masterful display by a world-renowned chef and local artisans.

In an extraordinary spread made with seasonal and sustainable produce, Bold Ingredients, Amazing Flavors reflected the Lexus commitment to always seeking out braver, more innovative experiences.

Reimagined Wine & Dine, set at the grounds of the Frasor Gallop Estate, presented a unique culinary reinterpretation of our imaginative approach to technology.



Escape to Amazing opened with an intimate dinner at Leeuwin Estate winery’s rustic Safari Club. As guests huddled around a sizzling fire pit, a few Aboriginal Australian Elders invited the guests onto their land by performing the traditional “Welcome to Country” ritual.

Inside the contemporary log cabin nestled in the local jarrah and marri trees, guests were seated at long communal tables. The feast included locally sourced entrées, vegetable side dishes, and meats cooked over an open fire.

The chef’s creations were paired with internationally acclaimed wines from Leeuwin Estate that were specially selected for the occasion. Guests were also able to engage with local craftsmen throughout the night, each part of which was curated in celebration of craftsmanship.



In a truly extraordinary lunch experience, guests were presented with a uniquely designed and sustainably-sourced spread.

Crafted using wild game and foraged natural ingredients from the Margaret River Region and around Western Australia, every dish was exquisitely presented and provided delicious, unexpected flavors.

The culinary experience explored new and unexpected flavours through combinations that pushed the boundaries of culinary experimentation. The lunch was centered around the Lexus guiding pillar of design, and the recognition that brave ideas result in amazing experiences.



The pristine lake at Fraser Gallop, one of Margaret River’s most prestigious and exclusive wine estates, provided a stunning backdrop for a sunset dinner.

The evening was created to take diners on a magical sensory journey featuring the use of culinary technology and innovative cooking techniques in celebration of Lexus’s commitment to always anticipating, exploring and pushing the boundaries with the use of technology.



Lexus was the official automotive sponsor of Margaret River Gourmet Escape, where our guests were invited to a series of activities including a private art tour and spectacular cooking performances from world-renowned chefs.

Between wine tastings and conversations with culinary greats, guests also enjoyed the exclusive Lexus Lounge where they got to mingle with distinguished chefs and taste their creations.

A hive of activity, discovery and surprises at the heart of the Margaret River Region, the Exhilarating Gourmet Village was crafted to feature the exciting and energizing performance that Lexus seeks to deliver with every amazing experience.
